Balbacua

Balbacua is a popular Filipino dish known for its rich, thick, and gelatinous stew, this food is famous in the Visayas and Mindanao. It is made by slow cooking beef skin, tendons, and sometimes bones or ox feet but I am just using the beef skin only 1kl. I stewed the beef skin for several hours until they become very soft and tender. Because of this long cooking process, the soup becomes naturally thick and sticky due to the collagen released from the meat. Balbacua is best served hot and usually paired with rice or sometimes bread but i paired this in sweet potatoes and corn its too delicious and I'm very enjoy eating alone in our lunch because my daughter and eldest son did not like to eat this kind of food only me , my husband and 2 sons eating this kind of food i don't know why they did not like to eat beef foods but for me its too yummy but they eat corned beef .
And this is my ingredient of balbacua for 1kl.of beef skin very simple but affordable tomatoe paste , black beans, garlic union,ginger,pepper seeds and leaves,pepper powder and long green chili ,oil ,soy sauce and of course the beef skin that I boiled first before sliced or cut.
By the way I'm only used wood when I cooked because the cowhide takes a long time to cooking or gets too soft .
